A journey through Paganic Rite ingredients and recipes.
My kitchen is a family kitchen, this is the first answer to what you eat at Rito Paganico. Here you can savor tastes and perceive aromas that take you back to your origins, but in my case to those of my Calabrian mother and those of my father who is from Paganico Sabino.
The ingredients I use are often local, from small breeders or farmers. I know their companies and I perceive from their gestures the love for what they do. When I move away from the mountains of Paganico Sabino, which are part of the regional nature reserve of Monti Cervia and Monte Navegna, to reach those of Calabria I instead find myself in contact with the "Calabria that I like", that of the kids who have chosen to stay and hold the reins of their family businesses, combining tradition and innovation.
The dishes I prepare together with my mother have a family flavour, the local ingredients make a simple dish a good dish.
The menu I propose, at €30 per person, consists of:
- a surprise "Rito Paganico" appetizer
- a heart-warming first course suitable for the season, which can be with a vegetable or meat sauce,
- a second course of meat with seasonal side dish, or veg depending on your needs.
- homemade dessert,
- coffee and bitters, homemade, or local or Calabrian organic of your choice.
The meal will be accompanied by organic or biodynamic wine for those over 18, carbonated drinks if requested, and "mayor's" water. All cooked dishes will be seasoned with Calabrian extra virgin oil, raw ones with organic Calabrian extra virgin oil.
